Chocolate Tart

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff and set aside.

Make the batter

  1. In a separate bowl, beat the egg yolks with the sugar until very light.

  2. Add the grated chocolate to the yolk mixture and mix well.

  3. Stir in the chopped almonds, raisins, rolled soda crackers, baking powder, lemon juice and peel, cinnamon, and citron.

  4. Gently fold in the beaten egg whites.

Bake

  1. Pour the mixture into a greased tart pan and bake for about 30-40 minutes or until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift, and yolks enrich and bind the batter as it sets.
Almonds
Add body and a tender, slightly oily texture to the filling.
Chocolate
Adds rich flavour and helps the filling set firm as it cools.
Soda crackers
Rolled to a powder, they absorb liquid and give the filling structure.
Baking powder
Releases gas in the oven to help the tart rise and lighten.

The step that matters

Folding in the beaten egg whites. Egg whites hold air from whipping, which gives the tart its lift. Folding gently keeps that air in; stirring hard deflates the batter and leaves a denser tart.

Swap the lemon
