Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Crab Apple Jelly
Ingredients
Directions
Prepare
Cut the crab apples into pieces, removing the seeds but not peeling them.
Place the apples in a stone jar and add a good-sized ½ cup of water.
Extract the juice
Set the jar on the back of the stove to boil slowly, covered, all day.
After boiling, place the mixture in a jelly bag and let it drip overnight.
If the apples are dry, add another ½ cup of water.
Make the jelly
Boil 1 pint of juice with 1 pound of sugar for 5 minutes, stirring constantly.
Repeat this process for each pint of juice, adding kindling wood under the kettle as needed.
Use the pulp
For leftover pulp, press it through a coarse strainer, add lemon juice and sugar equal to the pulp amount, and cook to make jam.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Siberian crab apples
- Provide natural pectin and acid, which allow the juice to set into a gel.
- Sugar
- Adds sweetness and, once concentrated by boiling, helps the juice set and keeps the jelly stable.
- Juice of 2 lemons
- Adds acidity that supports pectin setting and brightens the flavor.
The step that matters
Boiling the juice with sugar. Sugar must dissolve fully and the mixture must reach a rolling boil to concentrate and set into a gel. Constant stirring prevents sugar from scorching on the bottom of the pan, which would give the jelly a burnt taste.
Swap the apple
How well each one fits the dish's main ingredients (crab, sugar, lemon):
