Why it works: Cinnamon and almond match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,514 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Apple Pudding
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the apples
Preheat the oven to 350°F (175°C).
Pare the apples and cut off the tops to use as covers.
Carefully scrape out the insides of the apples without breaking them.
Mix the apple scrapings with sugar, raisins, cinnamon, pounded almonds, and white wine.
Fill the hollowed apples with the mixture and replace the tops.
Grease a pudding dish with butter and place the apples inside.
Stew the apples for a few minutes, being careful not to break them.
Make the batter and bake
In a bowl, beat the eggs with sugar and salt until thick, about 30 minutes.
Add the grated lemon peel and matzo flour, mixing until combined.
Pour the batter over the apples in the pudding dish and bake until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Beaten until thick, they set the batter and give the pudding its structure.
- Matzo flour
- Provides the body of the batter, thickening it so it bakes into a firm pudding.
- Apples
- Hollowed and filled, they hold the filling and add fruit flavour and moisture.
- Sugar
- Sweetens the filling and batter and helps the eggs whip to a stable foam.
- Raisins
- Add chewy sweetness to the apple filling.
The step that matters
Carefully scrape out the insides of the apples without breaking them. Thin apple walls tear easily. A breach lets the filling leak out during stewing and baking, leaving the pudding dry and uneven.
Swap the apple
How well each one fits the dish's main ingredients (sugar, raisin, cinnamon, almond, white wine, butter, egg):
- Vanillafits better
- Figfits better
- Peachfits about as well

Fit is the average pairing score against sugar, raisin, cinnamon, almond, white wine, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
