Strawberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cake

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks and whites of the eggs with sugar, salt, and lemon peel until thick.

  3. Gently fold in the matzo flour.

  4. Divide the batter into two layers and bake until golden.

Fill and finish

  1. Halve the strawberries and sprinkle with sugar.

  2. Once the cakes are cool, fill each layer with strawberries.

  3. Whip the cream, sweeten it, and spread on top of the cakes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped into a foam that gives the sponge its light, airy structure.
Matzo flour
Provides the light starch that sets the batter into a tender crumb.
Sugar
Sweetens the cake and helps the whipped eggs hold their volume.
Strawberries
Add moisture, acidity and fresh flavour to the filling.
Rich cream
Whipped to a soft topping that adds fat, richness and moisture.

The step that matters

Folding in the matzo flour. Whipped egg foam collapses easily. Folding gently keeps the air in the batter, so the cake rises light instead of dense.

Swap the lemon
