Why it works: Almond and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,514 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Macaroons.

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Blanch and grate the almonds.

Make the batter

  1. Whip the egg whites to a stiff froth.

  2. Gradually add the powdered sugar while continuing to whip.

  3. Fold in the grated almonds and ground cinnamon.

Shape and bake

  1. Drop spoonfuls of the mixture onto greased paper.

  2. Sprinkle coarse sugar over each macaroon.

  3. Bake for 15-20 minutes or until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the macaroons.
Egg whites
Whipped into a foam that gives the macaroons their light, airy structure.
Powdered sugar
Sweetens the batter and stabilizes the whipped egg white foam.

The step that matters

Whipping the egg whites. Egg whites must be whipped to a stiff froth so they trap air. Under-whipped whites lead to flat, dense macaroons, while the foam must be gently folded to keep its volume.
