Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and layer

  1. Butter a deep dish.

  2. Layer 1 cup of crushed crackers in the dish.

  3. Add a layer of oysters, seasoning with pepper and coarse sea salt.

  4. Dot with small pieces of butter and add ⅓ cup of oyster liquor or water.

  5. Repeat layers until the dish is full, finishing with a layer of crackers on top.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) for at least 45 minutes.

  2. Sprinkle with nutmeg if desired.

  3. If the dish is not moist enough, add more water next time.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling and the briny flavor of the dish.
Saltine crackers
Absorb the liquid and give the dish its body and soft, layered texture.
Butter
Adds richness and fat, helping the top brown in the oven.
Oyster liquor or water
Supplies moisture so the crackers soften and the dish does not dry out.

The step that matters

Adding the liquid. The crackers soak up moisture as they bake, so the liquid must be added in the layers to keep the dish from drying out. Too little liquid leaves the crackers dry and the oysters tough.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (butter, oyster, pepper):

  1. Parsleyfits better
  2. Thymefits about as well
  3. Sagefits about as well
  4. Nutmegthe original

Fit is the average pairing score against butter, oyster, pepper. Candidates are from the same food group and used in at least 100 recipes.
