Dressed Fish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Fillet the soles and fold them over.

  2. Place them on a buttered baking tray and cover with buttered paper to prevent burning.

  3. Cook in a preheated oven at 400°F (200°C).

  4. Melt the butter in a saucepan, then add the flour and fish stock.

  5. Once well combined, stir in the cream, salt, cayenne, and lemon juice.

  6. Finely chop the truffles, egg yolks, and parsley.

  7. Pound the lobster coral in a mortar and strain through a fine sieve.

  8. Arrange the soles on a serving dish and pour the sauce over them.

  9. Garnish each fillet alternately with truffles, egg yolks, coral, and parsley.
