Amber Pudding

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, core, and slice the apples.

  2. In a saucepan, combine the apples, butter, sugar, and lemon zest. Cook slowly until tender.

  3. Pass the mixture through a fine sieve.

Assemble the pudding

  1. Line a pie dish with puff pastry and decorate it as desired.

  2. Add the egg yolks to the apple mixture and pour it into the pie dish.

  3. Bake in a 350°F (175°C) oven for about 20 minutes.

  4. Whip the egg whites until stiff and spread them over the apple mixture.

  5. Sprinkle a little sugar on top and garnish with cherries.

  6. Place the pudding in a 300°F (150°C) oven for about 10 minutes to set the egg whites until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk of the pudding and, once cooked and sieved, a smooth, sweet fruit base.
Eggs
Egg yolks thicken the apple base, while whipped whites set into a light, airy topping.
Butter
Adds richness and fat, giving the apple mixture a smoother, softer texture.
Sugar
Sweetens the apples and helps the whites brown lightly on top.
Puff paste
Forms a crisp, flaky crust that holds the apple mixture in the dish.

The step that matters

Whipping and setting the egg whites. Whites must be whipped until stiff so they hold their shape on the apple base. Baking them too long or at too high a heat can cause them to weep or over-brown, so watch for a light golden colour.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, butter, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
