Ingredients

Directions

Prepare the cases

  1. Line small patty pans with thin pastry and fill with rice to keep them hollow; bake for 10 minutes.

  2. Remove the rice, blanch the oysters, and remove the beards, keeping the muscle intact.

  3. Soak the oysters in cold water to keep them fresh.

Make the filling

  1. In a pan, melt the butter, add the shallot, and cook until soft.

  2. Stir in the flour, curry powder, cream, lemon juice, cayenne, and salt; cook until thickened.

  3. Add the oysters to the sauce and heat gently without boiling.

Serve

  1. Fill the pastry cases with the mixture and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main seafood body and delicate flavour that the sauce carries.
Butter
Softens the shallot and adds richness to the sauce.
Flour
Thickens the cream and curry mixture into a sauce that holds in the pastry cases.
Cream
Adds moisture and richness, giving the sauce a smooth texture.
Curry powder
Supplies the warm, aromatic spice flavour that defines the dish.

The step that matters

Heat the oysters gently without boiling. Oysters toughen and shrink when overheated, so they should be warmed through in the sauce just until heated, not simmered.

Swap the carrot

How well each one fits the dish's main ingredients (oyster, shallot, cream, lemon, flour, butter, pepper):

  1. Chivefits better
  2. Spinachfits better
  3. Arrowrootfits better
  4. Carrotthe original

Fit is the average pairing score against oyster, shallot, cream, lemon, flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
