What each ingredient does

Isinglass or gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Orange juice
Supplies the main flavour, sweetness and acidity of the jelly.
Sugar syrup
Adds sweetness and body, balancing the tartness of the citrus juice.
Orange peel
Adds aromatic oils and a gentle bitterness to the syrup.

The step that matters

Remove the peels before the syrup becomes too bitter. Citrus peel releases bitter compounds the longer it cooks in the syrup. Removing the peels at the right time keeps the flavour clean and bright rather than harsh.

Swap the orange

How well each one fits the dish's main ingredients (syrup, lemon):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Vanillafits less well

Fit is the average pairing score against syrup, lemon. Candidates are from the same food group and used in at least 100 recipes.
