Bread Pudding

Why it works: Cinnamon and lemon match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 7,950 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Boil the cinnamon in the milk with the lemon peel.

  2. Let the mixture cool.

  3. Add sugar, beaten egg yolks, and bread crumbs.

  4. If desired, mix in chopped currants or raisins.

Bake

  1. Pour the mixture into a baking dish and bake in a cool oven at 300°F (150°C) for about 30-40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and enrich the texture as they set during baking.
Bread crumbs
Soak up the milk and egg mixture, giving the pudding its body.
Milk
Provides the liquid that softens the bread and sets into a custard.
Sugar
Adds sweetness and helps balance the richness of the egg and milk.

The step that matters

Bake in a cool oven. Egg yolks set into a smooth custard at moderate heat. A hot oven can overcook the eggs, causing curdling, a grainy texture, or a watery separation.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (milk, cinnamon, lemon, sugar, egg, bread):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against milk, cinnamon, lemon, sugar, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
