Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the batter and gives the pudding its body as it sets.
Eggs
Bind the batter and help it set firm during boiling.
Beef suet
Adds richness and moisture, melting into the pudding as it cooks.
Milk
Hydrates the flour and forms the liquid base of the batter.

The step that matters

Leave room in the pudding bag. The pudding swells as it cooks. If the bag is packed full, it can burst or become dense and misshapen, so space must be left for expansion.

Swap the ginger

How well each one fits the dish's main ingredients (flour, beef, milk, egg):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Jalapenofits better
  4. Gingerthe original

Fit is the average pairing score against flour, beef, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
