What each ingredient does

Rump steak
Provides the meat flavour and savoury body that the liquid carries once stewed.
Boiling water
Extracts flavour and soluble protein from the meat into a thin, drinkable liquid.

The step that matters

Stewing the steak covered over low heat. Gentle, covered stewing draws flavour out of the meat without toughening it. Letting the liquid boil hard or uncovered can make the broth cloudy and the meat dry and stringy.
