What each ingredient does

Oysters
Provide the main savoury filling, releasing their briny liquor as they stew.
Small french rolls
Form the crisp edible vessel that holds the filling.
Clarified butter
Fries the rolls to a brown, crisp crust with a rich flavour.
White wine
Adds acidity that brightens the rich oyster stew.
Gravy
Adds body and savoury depth to the stewed oyster mixture.
Butter
Adds richness and a silky texture to the finished oyster mixture.

The step that matters

Stew the oysters gently. Oysters toughen and shrink when overcooked, so they should warm through in the liquid only until their edges curl. Stewing them gently keeps them tender and keeps the liquor from reducing too far.

Swap the mace

How well each one fits the dish's main ingredients (butter, oyster, white wine, lemon, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against butter, oyster, white wine, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
