Ice Cream

Ingredients

Directions

Prepare the base

  1. Pour the cream into a broad pan and gradually stir in the sugar until well mixed.

  2. Strain the mixture through a sieve into a tin with a close cover.

Freeze

  1. Place the tin in a tub filled with broken ice and sprinkle a large quantity of salt around it, avoiding contact with the cream.

  2. As the cream freezes around the edges, scrape it down with a spoon.

  3. While freezing, gradually stir in the lemon juice or mashed fruit.

  4. Once fully frozen, dip the tin in lukewarm water to loosen the cream.

Serve

  1. Serve immediately or transfer to molds for later use, keeping them in a tub of ice and salt until ready to serve.

  2. Before serving, wash off any salt from the molds, dip them in lukewarm water, and turn out the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and richness, giving the frozen ice cream a smooth, creamy texture.
Powdered loaf sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer and scoopable.
Lemon juice or mashed fruit
Adds acidity and fruit flavor that brightens the sweet, rich cream.
Sweet almonds
Contribute nutty flavor and body to the cream base.

The step that matters

Keep salt away from the cream while freezing. Salt around the ice lowers its temperature well below freezing, so the cream can chill and set. If salt or brine gets into the cream, it can contaminate the mixture and make it taste salty and freeze unevenly.
