Stewed Reed Birds

Ingredients

Directions

  1. Pick and singe the birds, then cut them down the back with scissors or draw them like chickens.

  2. Wash and dry the birds on a clean cloth.

  3. Season the birds inside and out with salt and pepper.

  4. Layer the birds in a stew pan, sprinkling flour and adding lumps of butter between layers.

  5. Pour in just enough water to prevent burning, cover the pan, and cook slowly.

  6. Once tender, remove the birds, and if the gravy is too thin, add butter rolled in flour, boil once, and pour over the birds.
