What each ingredient does

Coffee
Browns during roasting, developing the roasted flavor and aroma that define the drink.
Sugar
Caramelizes slightly near the end of roasting, adding sweetness and a deeper color.

The step that matters

Stirring continuously while roasting. Coffee beans in a pan can scorch on contact with the hot surface before the inside browns. Constant stirring spreads the heat evenly so the beans brown throughout without turning black and bitter.
