What each ingredient does

Small beets
Form the edible shells that hold the filling and provide the main flavor and color.
Celery
Adds crisp texture and a fresh, mild crunch to the filling.
Cucumber
Adds cool moisture and crisp texture to the filling.
French dressing
Adds acidity and fat, seasoning the beets and carrying flavor into them.

The step that matters

Scooping the beet centers. Leaving ¼ inch thick sides keeps the beet cups sturdy enough to hold the filling. Cutting too thin risks tearing or collapsing when filled and dressed.
