Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the liquid into a jelly as its starch swells and gels during gentle cooking.
Cold water
Hydrates the tapioca so it can swell evenly and form a smooth, loose jelly.
Sugar
Adds sweetness and softens the flavor of the lemon and tapioca.

The step that matters

Boil gently for 1 hour, stirring occasionally. Tapioca starch must be fully cooked to become clear and fully thickened. Gentle heat with occasional stirring keeps the starch from sticking or scorching while it swells and sets as it cools.
