Sponge Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Boil the sugar in water until dissolved.

  2. While boiling hot, pour the sugar mixture onto the whisked eggs and beat for 2 minutes.

  3. Continue beating until the mixture becomes a very thick batter (20-30 minutes).

  4. Gently mix in the flour until just combined.

Bake

  1. Pour the batter into buttered tins sprinkled with sifted sugar.

  2. Bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked into a thick foam that traps air and gives the cake its light structure.
Vienna flour
Sets during baking to form the cake's crumb and hold its shape.
Lump sugar
Sweetens the cake and helps stabilise the whisked egg foam.

The step that matters

Beating the thick batter. Beating the hot sugar syrup into the eggs and continuing until very thick builds the air foam that makes the sponge rise. Under-beating leaves a dense cake, and the flour must be folded in gently so the trapped air is not knocked out.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, egg, flour, butter):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, egg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
