Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add body and help the jelly set into a delicate, slightly rich texture.
Gelatine
Sets the liquid into a firm jelly as it cools.
Loaf sugar
Sweetens the jelly and balances the sharpness of the lemon.
Lemons
Rind and juice add aroma and acidity that brighten the jelly.

The step that matters

Whisk until almost boiling, but do not boil. Heating the egg mixture to boiling can scramble the eggs and leave a grainy texture, while gentle heating lets the gelatine dissolve fully and the mixture stay smooth and clear enough to set evenly.

Swap the lemon
