Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks or whole eggs
Thicken the mixture and add richness and a custard-like body to the jelly.
Gelatine
Sets the liquid into a firm jelly once it has cooled.
Castor sugar
Adds sweetness and balances the acidity of the lemon juice and sherry.
Lemon juice
Adds acidity and bright flavour that cuts the sweetness and richness.
Sherry or marsala
Adds aroma and a deep, wine-based flavour to the jelly.

The step that matters

Whisk until almost boiling, never boiling. Egg proteins set and can curdle or turn grainy if overheated, so the mixture must be heated gently and stopped just short of boiling to stay smooth and clear.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sherry, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Pineapplefits better

Fit is the average pairing score against egg, sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
