Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Cook down into a soft pulp that forms the body and flavour of the dish.
Egg white
Whipped into foam that traps air, giving the dish its light, snowy texture.
Castor sugar
Sweetens the dish and helps the whipped egg white hold its stiff structure.
Lemon rind
Infuses the stewing apples with a fragrant citrus aroma before being removed.

The step that matters

Fold the pulp into the whipped egg white gently. Whipped egg white is a foam of air bubbles held by proteins. Heavy stirring knocks out the trapped air, so the dish turns dense and loses its lightness.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
