What each ingredient does

Breadcrumbs
Form the bulk of the pudding and soak up the milk to set a soft body.
Milk
Provides the liquid that softens the breadcrumbs and sets into a custard as it bakes.
Egg
Egg yolk thickens the custard and egg white whipped to stiff peaks lightens the topping.
Butter
Adds fat for richness and a smooth, tender texture.
Sugar
Sweetens the pudding and helps the whipped egg white hold its shape.
Lemon
Adds bright acidity and aroma from the juice and grated rind.

The step that matters

Folding the whipped egg white. Fold the whipped white gently so the air bubbles stay trapped. Overmixing deflates the foam, and the rocky topping then bakes flat and dense instead of light.

Swap the lemon
