Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cakes
Form the base layer and soak up the sherry and custard.
Eggs
Thicken the custard as they set with gentle heat.
Milk
Forms the liquid body of the custard that sets when heated.
Cream
Adds a light, airy topping that stays soft and rich.
Sherry
Moistens the sponge and adds a distinct aroma.

The step that matters

Stir the custard gently over low heat. Eggs thicken as their proteins set, but high heat or vigorous stirring can overcook them, causing curdling or a grainy texture. Low heat and gentle stirring let the custard thicken smoothly.

Swap the apricot

How well each one fits the dish's main ingredients (sherry, milk, egg, sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Figfits about as well
  4. Apricotthe original

Fit is the average pairing score against sherry, milk, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
