Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the mixture as they gently cook, giving the curd its body.
Lemon juice
Adds the sharp acidity that defines the curd's flavour.
Butter
Adds fat for a smooth, rich texture.
Gelatine
Sets the curd so it holds its shape when turned out.
Whipped cream
Adds lightness and a softer, creamier texture.
Saccharine
Provides sweetness in place of sugar.

The step that matters

Thicken gently without boiling. Stir the mixture over gentle heat until it only thickens slightly. Overheating can scramble the eggs and leave a grainy curd, while the gelatine must fully dissolve for the mould to set firm.
