What each ingredient does

Calf's liver
Is the main protein; boiling then marinating and roasting shape its final texture and flavor.
Sweet oil
Carries the herbs and aromatics into the liver and keeps the surface moist while roasting.
Butter
Enriches the flavor and adds richness to the wrapping paper and the cooking surface.

The step that matters

Remove the paper before the liver is done. Liver overcooks quickly and turns grainy and dry. Pulling the paper near the end lets the surface brown and be basted with drippings while the interior finishes gently.

Swap the onion

How well each one fits the dish's main ingredients (liver, thyme, parsley, pepper, butter):

  1. Carrotfits better
  2. Shallotfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against liver, thyme, parsley, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
