What each ingredient does

Beef
Provides the main protein, which firms and becomes tender as it cooks in the simmering water.

The step that matters

Keep the water boiling and skim the scum. Scum is coagulated protein and impurities that rise as the beef heats. Skimming it keeps the broth clear, and maintaining a steady boil keeps the cooking temperature even so the beef cooks through consistently.
