Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable structure as it cools.
- Egg whites
- Whipped into foam, they add lightness and an airy, sponge-like texture.
- White sugar
- Adds sweetness and helps stabilise the whipped foam.
- Lemon juice
- Adds acidity and bright flavour that balances the sugar.
The step that matters
Adding the egg whites. Egg whites must be added once the mixture is cold but before it firms up, so they whip into a stable foam. If the gelatine has already set, the whites will not blend in evenly and the sponge will be lumpy and dense.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original
- Datesfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
