Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the boiled milk into a stiff base that holds its shape.
Eggs
Add structure and lift, so the fried cakes puff and set.
Milk
Forms the liquid base that the flour thickens and the eggs enrich.

The step that matters

Beat the mixture for 15 minutes. Beating works air into the thick batter and develops the eggs' structure, which helps the cakes puff in the hot lard. A batter that is too thin or under-beaten will spread and fry flat.
