Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, creamy body once chilled.
Gelatine
Sets the cream so it holds its shape when turned out of the mould.
Egg yolks
Thicken the mixture and add richness when gently heated.
Sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemon
Adds bright acidity and aroma from the zest and juice.

The step that matters

Stir constantly without letting it boil until nearly cold. Egg yolks thicken and can scramble if overheated, so gentle, constant stirring over simmering water keeps the custard smooth while it cools and begins to set.
