Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the wine mixture into a set, creamy custard as they cook.
White wine
Provides the main liquid and flavor base for the cream.
Sugar
Sweetens the wine and balances its acidity.

The step that matters

Pour the wine mixture gradually onto the eggs, stirring well. Adding hot liquid to yolks too quickly can scramble them. Pouring slowly while stirring tempers the yolks, so they warm gently and thicken into a smooth custard.

Swap the lemon

How well each one fits the dish's main ingredients (white wine, sugar, egg):

  1. Vanillafits about as well
  2. Lemonthe original
  3. Applefits less well
  4. Plumfits less well

Fit is the average pairing score against white wine, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
