Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Collect all your ingredients together.

  3. Work the butter to a cream.

  4. Beat in the sugar.

  5. Whisk the eggs for 1 hour, then add them to the butter and cream.

  6. Add the flour and spices, then beat all together for 1½ hours.

  7. Mix in the brandy and lemon peel.

  8. Pour the mixture into a buttered tin.

  9. Bake for 1½ hours.
