Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almond paste

  1. Blanch the sweet almonds.

  2. Pound the blanched almonds.

  3. Add the grated lemon peel to the almonds.

  4. Beat the eggs.

  5. Mix the beaten eggs into the almond mixture.

  6. Combine the mixture well to form a stiff paste.

  7. Add a little water if needed to reach a stiff paste.

  8. Roll out the mixture thinly.

  9. Cut the rolled dough into small cakes with a pastry cutter.

Top and bake

  1. Mix the chopped almonds and sifted sugar with the beaten egg white to form a paste.

  2. Sprinkle the almond‑sugar paste over the cakes.

  3. Add a dusting of sugar over the cakes.

  4. Bake on buttered tins in a slow oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty almond flavour of the biscuits.
Eggs
Bind the almond mixture into a paste that holds its shape when rolled.
Sifted sugar
Adds sweetness and helps the topping brown lightly in the oven.
Egg white
Binds the chopped almonds and sugar into a topping that stays on the cakes.

The step that matters

Forming the stiff paste. If the mixture is too wet, the cakes spread and lose their shape in the oven. Adding water only a little at a time, and only if needed, keeps the paste firm enough to roll and cut cleanly.
