Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Main ingredient; they soften and turn mild and tender as they simmer in the hot vinegar.
White-wine vinegar
Provides the acidity that flavours the onions and keeps them tart and preserved.
Whole white pepper
Adds a mild, sharp aroma to the pickling liquid.

The step that matters

Simmer the onions only until clear. Simmering for too long softens the onions past the crisp-tender texture of a good pickle. Stopping once they turn translucent keeps them firm while the hot vinegar still penetrates and seasons them.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, wine, vinegar):

  1. Garlicfits better
  2. Tarragonfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against onion, wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
