Green Cheese

Ingredients

Directions

  1. Steep the sage, marigold leaves, and parsley in milk overnight.

  2. Follow the cheese-making process as described, ensuring the milk is warm when adding rennet.

  3. Stir the curd gently until whey separates, then drain and press the curd.

  4. Salt the curd and mix by hand before placing it in the cheese vat.

  5. Press the cheese and change the cloth frequently until no more whey remains.

  6. Turn and rub the cheese with a coarse cloth to prevent mold.
