Another Plum Cake, Not So Rich

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and sugar.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the flour, currants, candied peels, almonds, nutmeg, cinnamon, and mace.

Bake

  1. Pour the batter into a prepared cake pan and smooth the top.

  2. Bake for about 4 hours, checking for doneness as you would with a Savoy cake.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Add structure as they set and help bind the batter together.
Flour
Forms the structure of the cake as the batter sets in the oven.
Sugar
Sweetens the cake and helps hold air when creamed with butter.
Currants
Provide chewy pockets of fruit sweetness throughout the cake.
Candied peels
Add concentrated citrus sweetness and aroma throughout the cake.

The step that matters

Baking time and doneness. A long, low bake lets the centre set without the outside drying or burning. Checking doneness like a Savoy cake, by testing the centre, prevents an underbaked or dry result.

Swap the currant

How well each one fits the dish's main ingredients (sugar, flour, orange, lemon, butter, almond, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against sugar, flour, orange, lemon, butter, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
