Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Pine Apple Cream
Ingredients
Directions
Prepare the pineapple
Reserve two slices of pineapple, cut into small dice, and set aside.
Cut the remaining pineapple into rough pieces and combine with water, syrup, lemon juice, and sugar in a pot.
Stew for about 15 minutes until tender.
Make the cream
Soak the gelatin in 1 teacup of water, then add it to the pot and stir over heat until dissolved.
Rub the mixture through a coarse sieve and let it cool slightly.
Whip the cream until stiff, then gently mix in the cooled pineapple mixture.
Add the reserved pineapple pieces and mix gently.
Pour into a wet mold and refrigerate until firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Double cream
- Whipped to stiff peaks, it gives the dessert its light, rich body.
- Gelatine
- Sets the liquid mixture so the cream holds its shape when chilled.
- Pineapple
- Provides the main fruit flavour and, once stewed and sieved, a smooth, tender texture.
- Sugar
- Sweetens the pineapple and balances its acidity.
The step that matters
Rub the mixture through a coarse sieve and let it cool slightly. Cooling slightly keeps the mixture from collapsing the whipped cream when folded in, and sieving smooths the fruit so it blends evenly into the cream.
Swap the lemon

Fit is the average pairing score against pineapple, cream, sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
