  1. In a saucepan, combine sliced potatoes, stock (or water and bones), onions, parsley, pepper, and salt.

  2. Simmer for 3-4 hours, then strain through a sieve.

  3. Return the strained soup to the heat and simmer for another 30 minutes until thickened.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during long simmering to give the soup body and thickness.
Stock
Provides the liquid base and most of the savory flavor.
Onions
Add savory sweetness and aroma as they cook into the broth.
Cream
Adds richness and a smoother, silkier mouthfeel when stirred in at the end.
Butter
Adds fat for a rounder flavor and smoother texture.

The step that matters

Straining through a sieve. Pressing the cooked solids through the sieve releases starch and pulp, which is what thickens the soup; skipping or rushing this leaves it thin and grainy.

Swap the onion

How well each one fits the dish's main ingredients (potato, parsley, pepper, cream, butter):

  1. Carrotfits better
  2. Chivefits about as well
  3. Spinachfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, parsley, pepper, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
