What each ingredient does

Cream
Whipped into a stiff foam, its trapped air and fat give the dessert a light, airy body.
Castor sugar
Sweetens the dessert and helps stabilise the whipped cream foam.
Apricot jam
Adds fruit flavour and sweetness, and colours the cream.
Gelatine
Sets the mixture as it chills, giving it a firm, sliceable texture.

The step that matters

Working quickly when adding the gelatine. Gelatine begins to set as it cools, so it must be whisked in smoothly while still liquid. Adding it quickly keeps it evenly distributed and avoids lumps or streaks in the finished cream.

Swap the apricot

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
