What each ingredient does

Double cream
Whipped partly to give the set cream a light, airy, creamy texture.
Apricot puree
Provides the main apricot flavour and body to the cream.
Leaf gelatine
Sets the mixture so it holds its shape when turned out of the mold.
Lemon juice
Adds acidity that brightens the sweetness of the apricot.
Sugar
Sweetens the cream and balances the acidity of the lemon.

The step that matters

Molding at the right moment. Gelatine sets as it cools, so the mixture must be molded once it begins to thicken. Too early and it runs out of the mold; too late and it sets unevenly and may not blend with the whipped cream.
