Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped to soft peaks, it forms the light, airy body of the dessert.
Gelatine
Sets the dissolved liquid mixture so the cream holds its shape when turned out.
Sherry
Adds aroma and a rich, wine-based sweetness that flavours the cream.
Lemon juice
Adds acidity that brightens the sweetness and balances the richness of the cream.

The step that matters

Folding in the dissolved gelatine. Gelatine must be fully dissolved and added while liquid, then mixed gently. If it cools and clumps, or the cream is overmixed and deflates, the mixture may set unevenly or lose its airy texture.

Swap the lemon

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar, sherry. Candidates are from the same food group and used in at least 100 recipes.
