Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cream the butter and sugar together.

  2. Beat in the eggs with a little flour.

  3. Add the coffee essence, remaining flour, and baking powder.

  4. Pour the mixture into greased tins.

  5. Bake in a moderate oven at 350°F (175°C) for 15 to 20 minutes.

  6. Ice with coffee glacé icing when cold and decorate with chopped pistachios.
