Gooseberry or Apple Fool

Ingredients

Directions

Prepare the fruit

  1. Strew the fruit with sugar to draw out the juice, using about 6 ounces for 2 quarts of fruit.

  2. When the fruit is tender, pulp it through a coarse sieve.

Make the custard

  1. Add more sugar to taste, then mix in the milk and cream (or beaten egg yolks if using).

  2. Heat the mixture gently until it thickens, but do not let it boil.

  3. Let it cool before mixing with the fruit.

Combine

  1. Stir everything together until well combined.

  2. Optionally, add grated ginger for gooseberry, nutmeg and lemon rind for apple, and brandy to either.

What each ingredient does

Gooseberries or apples
Provide the tart fruit pulp that forms the base of the fool.
Sugar
Draws out juice from the fruit and sweetens the dish.
Milk
Adds liquid and body, and thickens with gentle heating to form a custard.
Cream
Adds richness and a smoother, silkier texture to the custard.
Egg yolks
Thicken the milk mixture when heated gently and add richness.

The step that matters

Heat the custard gently. Egg yolks thicken by gentle heat, and if the mixture boils they can scramble and curdle, leaving a grainy texture instead of a smooth custard.

Swap the apple

The recipe marks apple as optional. How well each one fits the dish's main ingredients (sugar, milk, cream, ginger, gooseberry, nutmeg, lemon):
