Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato base

  1. Boil or steam the potatoes until tender, then mash them.

  2. Mix the mashed potatoes with milk and salt, and rub through a colander.

  3. While warm, combine the mixture with an equal weight of dried flour.

Make and rise the dough

  1. Dissolve the yeast in warm milk or milk and water, then mix thoroughly with the potato mixture.

  2. Knead the dough, cover it, and let it rise in a warm place for 30 minutes.

Bake

  1. Shape the dough into rolls and bake in a preheated oven at 400°F (200°C) for 30 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Milk and flour barely smell alike, yet cooks put them together in 78,219 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mealy potatoes
Their starch and low moisture give the rolls a soft, tender crumb.
Dried flour
Provides the gluten and starch structure that holds the dough together and sets during baking.
Yeast
Produces carbon dioxide during rising, which leavens the dough and makes it light.
Milk
Adds moisture and richness, and helps the dough brown gently in the oven.

The step that matters

Rubbing the mashed potatoes through a colander while warm. Sieving breaks up lumps so the potato blends smoothly into the dough. Warm potato mixes more evenly with flour and yeast, and cold potato can make the dough stiff and dense.

Swap the potato

How well each one fits the dish's main ingredients (milk, flour):

  1. Arrowrootfits better
  2. Potatothe original
  3. Sweet potatofits about as well
  4. Parsnipfits about as well

Fit is the average pairing score against milk, flour. Candidates are from the same food group and used in at least 100 recipes.
