What each ingredient does

Potatoes
Starch that fries to a crisp brown outer layer while the inside stays tender.
Oil, butter, or fat
Conducts heat evenly and fries the slices, adding richness and browning.

The step that matters

Keep the fat very hot but not burning. Hot fat seals the potato surface quickly, so slices crisp rather than soak up oil. If the fat is too cool, the slices absorb grease and turn soggy; if it burns, they taste bitter and dark before cooking through.
