What each ingredient does

Spanish whiting
Fish protein that binds to impurities and helps lift them out of the honey as it clarifies.
Honey
Main body of the preparation, providing sweetness and the bulk that is clarified.
Charcoal
Adsorbs impurities and colour compounds, helping the honey become clearer.

The step that matters

Stir well with a skimmer to prevent the whiting from sticking to the bottom. Fish protein settles and can scorch on the hot base of the pot if it is not stirred. Scorched solids taint the flavour and darken the honey, so the mixture must be kept moving.

Swap the lemon

How well each one fits the dish's main ingredients (honey, whiting):

  1. Grapefits better
  2. Applefits about as well
  3. Lemonthe original
