What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the body of the pie.
White stock
Supplies moisture and liquid that cooks the sweetbreads and forms the sauce.
Butter
Adds richness and fat that carries flavour through the stew.
Flour
Thickens the stewing liquid into a cohesive, spoonable sauce.
Hard-boiled egg yolks
Add richness and a creamy, crumbly texture to the filling.

The step that matters

Stew the sweetbreads. Stewing gently keeps the sweetbreads tender and lets the flour thicken the stock evenly. Boiling hard can toughen the meat and leave the sauce lumpy or thin.

Swap the white pepper

How well each one fits the dish's main ingredients (shallot, butter, flour, mushroom, asparagus, egg):

  1. Capersfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against shallot, butter, flour, mushroom, asparagus, egg. Candidates are from the same food group and used in at least 100 recipes.
