Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bread

  1. Soak the bread in cold water, then squeeze it very dry.

  2. Remove any lumps from the bread.

  3. Add the boiling milk to the soaked bread.

Make the pudding

  1. Beat the egg and mix it with sugar and nutmeg.

  2. Combine the egg mixture with the bread and milk.

  3. If desired, add sultanas.

  4. Bake the pudding slowly at 300°F (150°C) until firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the body of the pudding and absorbs the milk and egg mixture.
Milk
Softens the bread and provides moisture for a soft, custard-like interior.
Egg
Sets during baking to bind the pudding and give it a firm texture.
Sugar
Adds sweetness to balance the bland bread and milk.

The step that matters

Bake the pudding slowly at 300°F (150°C) until firm. Egg proteins set gradually at moderate heat. Baking slowly lets the custard firm evenly without curdling or drying out, so the pudding stays moist and smooth.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against bread, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
