What each ingredient does

Pork chop
Provides the main protein, which firms and browns as it cooks over the fire.
Fresh butter
Adds richness and moisture, melting over the hot chop to carry the parsley and lemon flavour.

The step that matters

Moving the chop away from the fire. After the initial 2 minutes of direct heat, moving the chop to cooler grill space lets the centre cook through without the outside burning. Rushing this stage leaves the surface charred and the inside underdone.
